Easy coffee cake

Raw materials

  • 3 eggs
  • 200 grams of sugar
  • 1 dl milk
  • 100 grams of fat (butter or margarine)
  • 1 dl instant coffee
  • 200 grams of wheat flour
  • 1 teaspoon baking powder
  • 4 tablespoons cocoa powder

Manufacturing

  1. In a deep bowl, mix together the wheat flour and baking powder.
  2. Add cocoa powder, sugar and instant coffee to the flour mixture, stirring evenly. Then add the milk, eggs and melted fat.
  3. Whisk the mixture evenly, either by hand or with an electric mixer.
  4. Allow the mixture to settle for five minutes and beat again.
  5. Preheat the oven to 180º C. Place an oven pan filled with water on the bottom of the oven – this will prevent the coffee cake from drying out during baking.
  6. Grease and grind the cake pan with breadcrumbs. Pour the batter into the cake pan and bake the cake in the middle of the oven for about 40 minutes.
  7. Cool the coffee cake and, if desired, you can decorate the surface of the cake by sifting icing sugar on top of it.

Walnut coffee cake

Raw materials

  • Nuts to your liking
  • 3 medium-sized eggs
  • A few drops of vanilla essence
  • 200 grams of wheat flour
  • 150 grams of fat (butter or margarine)
  • 80 grams of dark sugar
  • 1 teaspoon baking powder
  • 1 tablespoon of ready-made coffee

Manufacturing

  1. Preheat the oven to 180º C.
  2. Grease and grind the cake pan with breadcrumbs.
  3. In a deep bowl, whisk together the room temperature fat and sugar until the mixture is creamy fluffy.
  4. Add the eggs to the mixture one at a time, stirring gently.
  5. Add the vanilla essence to the mixture.
  6. Then strain both the flour and baking powder into the mixture and mix the dough gently until smooth.
  7. Add the nuts and the prepared coffee.
  8. Pour the batter into a floured cake pan and bake the cake in the middle of the oven for about 35-40 minutes.
  9. Check the maturity of the cake with a toothpick. If the stick rises clean from the cake, the coffee cake is ready.
Easy and fast coffee cake

Chocolate coffee cake

This combination of chocolate and coffee is simply delicious!

Raw materials

  • 200 grams of wheat flour
  • 200 grams of sugar
  • 150 grams of fat (butter or margarine)
  • 4 medium-sized eggs
  • 50 ml of milk
  • 50 ml instant coffee
  • 1 teaspoon baking powder
  • 100 grams of chocolate

Manufacturing

  1. Preheat the oven to 180º C.
  2. Grease and grind the cake pan with breadcrumbs (you can also grind the pan with cocoa flour instead of breadcrumbs).
  3. In a deep bowl, whisk together the room temperature fat and sugar until the mixture is evenly fluffy.
  4. Then add the eggs one by one to the dough and continue beating (beat each egg thoroughly into the mixture before adding the next one).
  5. Mix the milk and coffee powder in your own bowl and then add them to the mixture.
  6. Carefully melt the chocolate in a water bath and cool the mixture for about five minutes before adding it to the dough.
  7. Strain the flour and baking powder together and mix them gently into the dough mixture.
  8. Pour the batter into a floured cake pan and bake the cake in the middle of the oven for about 40 minutes.

This coffee cake can also be made with a chocolate veil as follows: 

  • Heat 100 grams of cream in a small saucepan to boiling point.
  • Remove the pan from the heat and add a piece of butter and about 100 grams of chocolate cut into small pieces.
  • Mix the ingredients well together and wait for the chocolate to melt properly into the mixture.
  • Carefully cover the coffee cake with a chocolate veil and serve chilled.
