Classic asparagus soup

The following asparagus soup recipe is the most common. It is both familiar and very easy to prepare. And the best part about it is that it doesn’t require a lot of ingredients or any special cooking methods to make it.

The amounts below are for two people.

Ingredients

  • ½ onion
  • ½ potatoes
  • olive oil
  • whipped cream
  • 325 g of green asparagus
  • 500 ml chicken or vegetable broth
  • spices: salt and white pepper
  • optional: 1 leek

Manufacturing

  1. Wash the asparagus, cut off the harder lower part of the stem and then cut the remaining asparagus into medium pieces.
  2. Sauté the onion and potatoes in olive oil in a pan. When they are ready, set aside.
  3. Boil chicken or vegetable broth in a saucepan with olive oil drizzle. When the broth reaches boiling point, add the asparagus pieces. Let them cook for a few minutes on medium heat.
  4. Turn off the stove, add the onion and potatoes and mix all the ingredients into a uniform mixture.
  5. Season to taste and cook for 15 minutes on medium heat.
  6. After 15 minutes, add a little cream and let it stand for a few minutes so that everything mixes well.
  7. Garnish with whatever you want and serve hot.

Ingredients

  • 2 cloves of garlic
  • fresh basil
  • olive oil
  • 2 leeks
  • 2 zucchini
  • 1 sweet onion
  • 2 big apples
  • spices: salt and cinnamon
  • 1 bunch of green asparagus
  • optional: 1 teaspoon brown sugar

Manufacturing

  1. Peel and chop the garlic cloves into small pieces (as small as you can). Do the same for onions, zucchini and leeks.
  2. As in the previous recipe, cut the hard lower parts of the asparagus stem and throw them away. Cut the rest of the asparagus into medium pieces.
  3. Peel and chop the apples. Put them in a saucepan with a small amount of water and cinnamon to soften them. Be careful not to turn the apples into jam.
  4. Heat a small amount of olive oil in a pan and saute the onion and garlic. When they are ready, add the leeks, asparagus and zucchini.
  5. Transfer the ingredients to the same pot as the apples and cinnamon. Add a little water (until all the ingredients are covered) and let cook for about 15 minutes. Then turn off the stove and let the soup rest.
  6. Finally, season and puree all the ingredients in a blender. Add the basil on top and serve hot.

This asparagus soup is perfect for an appetizer or light dinner however you like. It is important to be precise with the cooking times and temperature for the recipe to succeed perfectly.
